A fast weapon with good strength scaling would work well, I.E club, (yes it has S scaling in strength when upgraded) red iron twinblade or bone fist. You'll also need a shield with good stability and magic defense. Note: I beat this boss on NG only, so my advice may be inaccurate to later cycles of NG+.Thanks for watching.
