Pure dex has way more weapon variety than pure str. There's spammy curved swords, weeb swords, a great scythe, baller swag sword, rapiers, whips. Not to mention the spell cast speed boost you get from dex. Most people end up leveling both dex and str though. A lot of good weapons require a decent level in both stats.
